Chocolate Chip Coffee Cookies

Cookies are great to munch on just about anywhere, anytime. Indeed, if you are a true coffee lover, you can hardly go wrong with making a batch of these delicious chocolate chip coffee cookies. The flavors of coffee, vanilla and chocolate seem to work perfectly in a multitude of settings and this one is no different. Serve the cookies with a cup of refreshingly cold milk, with a cup of tea, hot chocolate or…or a cup of coffee!

Ingredients: (makes 4-8 servings)

  • 1 cup of flour
  • 1 shot of espresso
  • 5 ounces of sugar
  • 5 ounces of butter
  • 2 ounces of chopped dark chocolate pieces
  • 1 large egg
  • 2 teaspoons of finely ground coffee
  • 1 teaspoon of baking powder
  • 1 teaspoon of vanilla extract
  • 1 pinch of salt


  • Preheat the oven to 350 degrees Fahrenheit
  • Prepare the espresso shot and let it cool
  • Melt the butter until it turns into a liquid
  • In a large bowl, whisk sugar and melted butter
  • Add flour, baking powder, salt
  • Mix well
  • Add egg, vanilla extract and chocolate chunks and mix well
  • Pour in the coffee and mix until the dough has soaked it up
  • Grease a large baking sheet or use baking paper
  • Scoop a spoonful of dough onto the surface
  • Leave ample space between the scoops as they will spread as they bake
  • Bake in the preheated oven for 10 minutes or until golden brown
